I love riding bikes. I love riding outside, and I love riding at Watts. And I also love eating. Part of being able to exercise and maintain your desired level of intensity is properly fueling your body. This is where nutrition becomes so important to your lifestyle. With summer upon us, Watts will be reviewing recipes and letting you know which ones we think will be great ones to add to you summer menu!
I heard of the blog Annie’s Eats when Annie herself came in for a ride wearing one of her shirts. It cracked me up so I asked her and we got to talking a bit about her blog. I checked her out and she posts great recipes and beautiful pictures of all of them. In honor of the first *hot* summer-ish day, here is what I hope is the start of a great series of posts!
First up: Strawberry Yogurt Popsicles from Annie’s Eats
This recipe was right up my alley. Put ingredients in a blender, pour into mold, freeze, eat.
Meet the ingredients: strawberries, lemon, vanilla, plain greek yogurt. For this recipe you need:
- 2 cups coarsely chopped strawberries
- 1 1/2 tsp. lemon juice
- 1 1/2 tsp. vanilla
- 1/4 c. Greek yogurt
There were a few options for different flavors, and one was a strawberry lemon version which I used. I have no zester so I used all of the juice of the lemon instead of the recommended 1 1/2 tsp.
So basically once you have all of these ingredients assembled, you put them all in a blender, but here at my house, we’re too cool for blenders, so we have a make shift magic bullet. **Fun Fact: a glass thread on the bottom of a blender is a standard thread which is the same as on the regular size mason jar**
That means you can take a jar, and the blade and blender attachment and screw them on… flip them over… and presto, homemade magic bullet!
So once all the blending was done, I poured the mixture into my super awesome crayola popsicle molds, popped them in the freezer and tada!
The result was a tart, refreshing frozen treat with about 30 calories each. These will definitely be a regular on my summer menu. I might add a little honey or something to sweeten it a bit in the future or maybe a little less lemon because mine turned out a tad sour, but overall they were delicious.
